Interview with the chef
Plum spice pairs exceptionally well with dashi dishes such as plum chazuke and chazuke made with Chinese dashi stock.
When paired with Chinese cuisine, it harmonizes with black beans, roasted sesame seeds, and chili peppers, creating a refreshing finish.
Yuzu spice is a great addition to spicy dishes like chili stir-fried chicken.
The tangy flavor of Japanese pepper and chili pepper is complemented by the refreshing aroma of yuzu, creating a pleasant flavor that lingers in your nose.
Sakura spice goes well with shrimp mayonnaise, so by simply mixing fried shrimp with mayonnaise and condensed milk and adding sakura spice, you can create a special flavor that can be easily enjoyed at home.
Chestnut spice is also perfect for snack dishes; just put it in a bag and sprinkle it on to easily create a dish that goes well with alcohol.
Regarding the difference between "Furikake" and "Spice", if you just sprinkle it on noodles or rice to enjoy it, you can use "Furikake", and if you want to add accent or saltiness to a dish during the cooking process, such as stir-frying, you can use "Spice".
I think the plum flavour is the easiest to use at home.
It goes well with dishes that use dashi, of course, but the combination of white rice and plums is familiar and easy to imagine the flavor, making it appealing in that it is easy to think of variations on the dish.
Furthermore, plums go well with cucumbers, and you can make a dish just by mixing it with salt. It is particularly recommended for its versatility and ease of use.
Since Chinese cuisine often involves eating many dishes at once, we aim to serve light, flavorful dishes that won't tire your appetite.
In addition, based on my specialty, Cantonese cuisine, we provide a daily menu that incorporates spicy dishes and a variety of regional cuisines from across China.
Furthermore, when serving food in Kyoto, we proactively use fresh local vegetables and Japanese meat and seafood, placing great importance on bringing out the natural flavors of the ingredients.
We carefully select all our ingredients and cook them every day, striving to make the most of their unique flavors.
